VeganMoFo: Mac 'n Cheese

Note: I am doing a painting-a-day challenge for VeganMoFo, and will be creating a new painting of rescue animals or vegan food throughout the month of October, and placing them for sale. All proceeds (minus shipping) will be donated to For the Animals Sanctuary, because they are a pretty super-great non-profit animal rescue and sanctuary, in Blairstown NJ, and are vegan owned and operated. Feeding, housing, and taking care of these animals costs a lot of money, and as a non-profit organization, they rely entirely on donations. Hopefully (with your help!), I'll be able to make a size-able donation at the end of the month!  You can check out all the paintings I have created so far that are still for sale here! 



This is totally another Mom-meal, some mac 'n cheese.  Granted hers was baked casserole-style, and this is my super-lazy-oh-my-god-I'm-hungry version.   I mix mine up right in the pot the pasta was boiled in.  I add in a healthy dose of nooch, a splash of unsweetened soy milk, about 1-2 TBS of earth balance, a clove or two of garlic, and some salt/pepper.  I stir until creamy, adding more earth balance or soy milk if need be, and wha-la, the ultimate lazy mac 'n cheese.  I added some broccoli into the boiling pasta water in the last minute so that I had some green in my meal.  If I'm feeling fancy, I'll add in a sprinkle or two of Daiya if I have any on hand (there is a bit of Daiya mozzarella in this bowl.) Yay Mom-meals!

Long weekend and lazy Sunday

Hello! I had an awesome long weekend with my Mom here visiting. We did tons and tons of walking and saw some cool/crazy stuff. I think I tired her out! :)


I dropped my Mom off at the train station this morning and had a lazy Sunday after I got home. Made brunch, took a little nap (which I never, ever, ever do!!), painted all afternoon and evening, and had a super-awesome salad loaded with stuff for dinner.



Blueberry pancakes that I made for Mom Saturday morning. We even had fresh cantaloupe from my CSA that I picked up that morning. So juicy!

I made this tofu omelet this morning for brunch, with an olive tapenade and sauteed veggies inside.

Loaded salad for dinner! This hit the spot in a mega way. And btw, fresh corn off the cob on a salad is my favorite thing lately. Yum! And I could eat those little golden cherry tomatoes like candy.


Some work in progress from painting today. I moved into the kitchen to be by the window and my sleeping kitty! And yes, he sleeps on a pizza box that we don't have the heart to throw away. He's on it 24/7!

VeganMoFo Day 2: Breakfast as Dinner



I'd like to give a shoutout to my mom, for wholeheartedly endorsing breakfast for dinner during my childhood. Go with what's good, and what isn't good about breakfast?!? There's been an explosion of posts lately about the vegweb recipe, the Egg McVegan, and I had to jump on the bandwagon, and make it the star of my dinner. I read the comments and mostly went with them in changing it up; rice vinegar and garlic powder for the tofu, plus some sea salt and black pepper and a tiiiiiny shake of turmeric. I used the Ultimate Uncheese Cookbook's gooey grilled cheese recipe for the cheese (and I would DRAMATICALLY cut the tahini used next time, as that was all that I tasted, even after tripling the nooch) and some storebought fakin' bakon on some generic english muffins. Totally yummy. I haven't been to McDonalds in at least a decade, but I do have sentimental memories of going there for breakfast super-early in the morning, with my family, the mornings that we would leave for our annual family drive all the way down to Florida for vacation. Ahh long car drives with family.

My favorite breakfast that my Mom used to make us for dinner was her heart-shaped waffles. I shall walk down memory lane soon and make that too!
