VeganMoFo: Graham Cake

Note: I am doing a painting-a-day challenge for VeganMoFo, and will be creating a new painting of rescue animals or vegan food throughout the month of October, and placing them for sale. All proceeds (minus shipping) will be donated to For the Animals Sanctuary, because they are a pretty super-great non-profit animal rescue and sanctuary, in Blairstown NJ, and are vegan owned and operated. Feeding, housing, and taking care of these animals costs a lot of money, and as a non-profit organization, they rely entirely on donations. Hopefully (with your help!), I'll be able to make a size-able donation at the end of the month!  You can check out all the paintings I have created so far that are still for sale here! 



So, um, I've been snacking on this amaazingly beautiful cake for the last few days, and I'm getting a little sad that it's almost gone.  This is the Graham Cracker Cake, from Celine and Joni's Hearty Vegan, and oh my goodness is it yummy.  A nice graham cracker flavored cake with chocolate chips speckled throughout, and topped with a whole lot of roasted marshmallow-y gooeyness (I used Dandies).  This would be an excellent cake to bring along and impress people at a picnic or potluck.

VeganMoFo Day 10: White Pizza vs. Chocolate Pizza!





I did something kinda crazy last night, and decided to make a white pizza AND a chocolate-crazy-awesome pizza. I know, I know, I'm so crazy on my friday nights! White pizza was comprised of the VWAV pizza crust, a cashew-tofu ricotta, and some teese cheese on top. A bit on the dry side, and could have used a wetter sauce to help it along. Better the next day, reheated with extra teese on top! Now, this chocolate pizza, was some kind of wonderful. I had split up the pizza dough before the heavy kneading part, and mixed in a little sugar and cocoa powder to make the chocolate crust. It is spread with Dark Chocolate Dreams (I have an addiction to this stuff!), topped with bananas, chocolate chips, maraschino cherries, and Dandies! Seriously, so so good. Fabulous for some Lost watching (I'm almost to the end of season 2 and officially hooked!) on a relaxing friday night.

End of summer

Hello! Hope your weekends were lovely! I enjoy my days off, and FINALLY got one good beach day in as the summer comes to a close. Nik and I took the train out to Long Beach, Long Island on Saturday and spent the day basking in the sun and taunting waves in the ocean. Love it when a good wave kicks your butt! I packed us some tofu sammiches for a little picnic on the beach. Long Beach is awesome...clean white sand, not too crowded, and the weather was PERFECT. Farewell summer!

Ohhhhh and I found some Dandies at Whole Foods last week! I ate half the bag as is, before I made myself stow them away so there would be SOME left to bake with later. I made some chocolate walnut dandies, kinda using the chocolate chocolate chip recipe from VCon. Amaazing!

Tofu Omelet brunch on Labor Day. Filled with Cheezley Bacon Chedder, cherry tomatoes, red onion, and sriracha.

Pizza! sausage-y seitan crumbles, Cheezley bacon chedder, pesto, carmelized red onions, and homemade red pepper tomato sauce.
