VeganMOFO: Green Monster Bread




I've always felt like I have been some kind of a failure when it comes to making my own bread from scratch. The loaves never rise that much in the oven or they just come out super-dense and crumbly or have some other sad problem. Sigh. But these!  These are kinda awesome. The Green Monster Bread, from Vegan Sandwiches Save the Day, by the ever-lovely lady-duo of Celine and Tami, totally rose and did their thing all proper-like. Woot! I went and made the roll/bagel version, which requires you to boil them quickly in a baking soda/water pot. Love the chewiness and hard exterior that gives it. And Arugula is the best, so I appreciate being able to cram into more of my meals. Hooray for sammiches!

I made mine with white whole wheat and spelt flour, instead of all-purpose flour, hence the more of a Brown Monster Bread hue (2 cups WW and 1 cup spelt).

(Above sammich has a veganaise/hot sauce smear, tomatoes, avocado, and baked tofu for some ultimate yum-lunch.)

Note: I am doing a painting-a-day challenge for VeganMoFo, and will be creating a new painting of rescue animals or vegan food throughout the month of October, and placing them for sale. All proceeds (minus shipping) will be donated to For the Animals Sanctuary, because they are a pretty super-great non-profit animal rescue and sanctuary, in Blairstown NJ, and are vegan owned and operated. Feeding, housing, and taking care of these animals costs a lot of money, and as a non-profit organization, they rely entirely on donations. Hopefully (with your help!), I'll be able to make a size-able donation at the end of the month!  You can check out all the paintings I have created so far that are still for sale here!

Let's talk about sandwiches.  I'm obviously a fan (I mean, who isn't?) of the wonderful act of stuffing tasty morsels in some magical carb-y goodness.  So when Celine and Tami asked me to test for their upcoming Vegan Sandwich book, I did a little happy dance and got this sammich party started.  These ladies have come up with some of my new favorite spreads and creative flavor pairings for sandwiches to date.  Here are a few of the sandwiches that I tested, and if you are looking to find out more, search each of their super-amazing blogs for "sandwiches" for some photos and recipes that they have been teasing us with lately.

Sammiches and pie

Today was a good day; Super-sunny and productive. I slept in late and made a nice pancake brunch (mmm apple-cinnamon! I have a bajillion apples!), made a grocery-run, and then worked on a painting at a coffee shop. Tonight's dinner was a ginormous beanball sub, using the beanballs from Vcon (except made with chickpeas) and just slathered with a fire-roasted tomato sauce (with added onions, garlic, and braising greens). I love mega-sandwiches!



I've made this sandwich twice this week; Tempeh slathered in a thousand island-esque dressing on crusty bread (bread pictured is Kalamata Olive). So easy and yummy. I boil the tempeh until it's super-tender.

Just when I thought I had my apple stock under control, making this Apfel Kuchen, then my CSA went and gave me 14 more apples yesterday. D'oh! I was thinking about making some apple hand-pies (like pop-tarts?) and freezing them.
